Answer: "Bismillāh" (In the name of Allah).

If one forgets to say it before eating, he should say:

"Bismillāhi fī awwalihi wa ākhirih" (In the name of Allah at its beginning and at its end). [Narrated by Abu Dāwūd and At-Tirmidhi]
